Ingredients
  

For the Chicken
  • 4 pieces chicken breasts
  • 1 cup ricotta cheese
  • 2 cups marinara sauce
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • Olive oil to drizzle

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Carefully slice a pocket into each chicken breast.
  3. In a bowl, mix the ricotta cheese, Italian seasoning, salt, and pepper.
  4. Stuff each chicken breast with the ricotta mixture and some marinara sauce.
  5. Place the stuffed chicken breasts on a baking dish.
  6. Pour the remaining marinara sauce over the chicken and sprinkle with mozzarella and Parmesan cheese.
  7. Drizzle olive oil on top.
Cooking
  1. Bake for 25-30 minutes or until the chicken is cooked through and the cheese is bubbly.
  2. Let it rest for a few minutes before serving.

Notes

This dish is best served with a side salad or garlic bread. For extra flavor, you can add spinach or mushrooms to the ricotta mixture. You can freeze the stuffed chicken for up to 3 months.
