Preparation
- Preheat the oven to 375°F (190°C).
- Carefully slice a pocket into each chicken breast.
- In a bowl, mix the ricotta cheese, Italian seasoning, salt, and pepper.
- Stuff each chicken breast with the ricotta mixture and some marinara sauce.
- Place the stuffed chicken breasts on a baking dish.
- Pour the remaining marinara sauce over the chicken and sprinkle with mozzarella and Parmesan cheese.
- Drizzle olive oil on top.
Cooking
- Bake for 25-30 minutes or until the chicken is cooked through and the cheese is bubbly.
- Let it rest for a few minutes before serving.
Notes
This dish is best served with a side salad or garlic bread. For extra flavor, you can add spinach or mushrooms to the ricotta mixture. You can freeze the stuffed chicken for up to 3 months.
