- Heat the olive oil in a large skillet over medium heat.
- Add the sliced Kielbasa to the skillet and cook until browned, about 5-7 minutes.
- Remove the Kielbasa from the skillet and set it aside.
- In the same skillet, add the onions and Brussels sprouts. Cook for about 5 minutes or until the Brussels sprouts are tender.
- Stir in the minced garlic and cook for an additional 1-2 minutes.
- Return the Kielbasa to the skillet, stir well, and heat through.
- Season with salt, pepper, and red pepper flakes if desired.
- Garnish with chopped parsley and serve.
Notes
Kielbasa and Brussels sprouts stir-fry can be served on its own or over rice/noodles. It can also be customized with additional veggies like bell peppers and carrots. Store leftovers in an airtight container for up to 3-4 days, or freeze for longer storage.
