Preparation
- Preheat the oven to 400°F (200°C).
- In a bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, garlic, and ginger to make the marinade.
- Place chicken thighs in a resealable bag or dish and pour the marinade over them. Marinate for at least 30 minutes, preferably overnight.
Cooking
- Remove chicken from marinade and place in a baking dish.
- Pour remaining marinade into a saucepan and bring to a boil. Mix cornstarch with water and stir it in to thicken the sauce.
- Bake chicken for 25-30 minutes or until cooked through, basting occasionally with the sauce.
- Once done, sprinkle with sesame seeds and green onions. Serve with rice or vegetables.
Notes
For a spicier kick, add a pinch of red pepper flakes to the marinade. Store leftovers in an airtight container for up to 3 days.
