Juicy Oven-Baked Teriyaki Chicken

Ingredients
  

Main Ingredients
  • 4 pieces chicken thighs
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar Adjust sweetness to taste
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • to taste Sesame seeds and green onions for garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, garlic, and ginger to make the marinade.
  3. Place chicken thighs in a resealable bag or dish and pour the marinade over them. Marinate for at least 30 minutes, preferably overnight.
Cooking
  1. Remove chicken from marinade and place in a baking dish.
  2. Pour remaining marinade into a saucepan and bring to a boil. Mix cornstarch with water and stir it in to thicken the sauce.
  3. Bake chicken for 25-30 minutes or until cooked through, basting occasionally with the sauce.
  4. Once done, sprinkle with sesame seeds and green onions. Serve with rice or vegetables.

Notes

For a spicier kick, add a pinch of red pepper flakes to the marinade. Store leftovers in an airtight container for up to 3 days.
