Ingredients
  

Marinade
  • 1/2 cup fresh orange juice Use freshly squeezed for best flavor.
  • 3 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
Chicken
  • 4 pieces chicken breasts Boneless, skinless for best results.

Method
 

Marinade Preparation
  1. In a bowl, whisk together the orange juice, Dijon mustard, olive oil, garlic powder, salt, and pepper to create the marinade.
  2. Place the chicken breasts in a resealable plastic bag or shallow dish, and pour the marinade over them.
  3. Seal the bag or cover the dish, and refrigerate for at least 1 hour, or overnight for maximum flavor.
Grilling
  1. Preheat the grill to medium-high heat.
  2. Remove the chicken from the marinade and discard the marinade.
  3. Grill the chicken for 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F.
  4. Let rest for a few minutes before serving.

Notes

For best flavor, marinate overnight and let chicken come to room temperature for 15 minutes before grilling. Avoid overcrowding the grill for even cooking.
