Ingredients

  • 1 cup cornmeal Use medium or coarse cornmeal for more texture.
  • 1 cup water or milk Use milk for a richer taste, if desired.
  • 1/2 teaspoon salt
  • 1 teaspoon sugar (optional)
  • 2 tablespoons butter or oil Use on the skillet for a golden crust.

Method
 

Preparation
  1. In a mixing bowl, combine the cornmeal, salt, and sugar.
  2. Gradually add water or milk, stirring until you have a thick batter.
Cooking
  1. Heat a skillet over medium heat and add butter or oil.
  2. Pour batter onto the skillet to form flat cakes.
  3. Cook until golden brown on one side, then flip and cook the other side.
  4. Serve warm.

Notes

Let cooled Johnny Cakes be stored in an airtight container in the fridge for up to 3 days or frozen for up to 1 month. Reheat to serve.
