Preparation
- In a bowl, mix together the white wine vinegar, olive oil, minced garlic, oregano, thyme, salt, and pepper.
- Place the chicken thighs in a large zip-top bag or a shallow dish, and pour the marinade over them.
- Seal the bag or cover the dish, and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Cooking
- Preheat your oven to 375°F (190°C).
- Remove the chicken from the marinade and place it in a baking dish. Discard the marinade.
- Bake for 30-35 minutes or until the chicken is cooked through and no longer pink in the center.
- Garnish with fresh parsley before serving.
Notes
For a more intense flavor, marinate the chicken thighs for longer—up to 2 hours is ideal. You can also experiment with different herbs, such as rosemary or basil.
