Ingredients
  

For the Marinade
  • 1 cup white wine vinegar Tenders the chicken and adds tanginess.
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • to taste Salt and pepper
For the Chicken
  • 4 pieces chicken thighs Bone-in thighs can be used for a juicier result.
  • Fresh parsley for garnish

Method
 

Preparation
  1. In a bowl, mix together the white wine vinegar, olive oil, minced garlic, oregano, thyme, salt, and pepper.
  2. Place the chicken thighs in a large zip-top bag or a shallow dish, and pour the marinade over them.
  3. Seal the bag or cover the dish, and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Cooking
  1. Preheat your oven to 375°F (190°C).
  2. Remove the chicken from the marinade and place it in a baking dish. Discard the marinade.
  3. Bake for 30-35 minutes or until the chicken is cooked through and no longer pink in the center.
  4. Garnish with fresh parsley before serving.

Notes

For a more intense flavor, marinate the chicken thighs for longer—up to 2 hours is ideal. You can also experiment with different herbs, such as rosemary or basil.
