Main Ingredients
  • 1 pound Italian sausage Use good quality for best flavor.
  • 1 can white beans (cannellini or great northern), drained and rinsed Drain and rinse to remove excess salt.
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 2 cups kale, chopped Add last so it stays tender.
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil For sautéing.
  • Grated Parmesan cheese for serving (optional) Sprinkle on top when serving.

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, sauté until the onion is translucent.
  3. Remove the sausage from its casing and add it to the pot, breaking it up into smaller pieces as it cooks. Cook until browned.
  4. Stir in the white beans, broth, thyme, salt, and pepper. Bring to a simmer.
  5. Add the chopped kale and cook for another 5-7 minutes until the kale is wilted and tender.
Serving
  1. Serve hot in deep bowls, garnished with grated Parmesan if desired.

Notes

Serve with crusty bread or a simple green salad. A slice of lemon on the side brightens the flavor.
