Preparation
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and garlic, sauté until the onion is translucent.
- Remove the sausage from its casing and add it to the pot, breaking it up into smaller pieces as it cooks. Cook until browned.
- Stir in the white beans, broth, thyme, salt, and pepper. Bring to a simmer.
- Add the chopped kale and cook for another 5-7 minutes until the kale is wilted and tender.
Serving
- Serve hot in deep bowls, garnished with grated Parmesan if desired.
Notes
Serve with crusty bread or a simple green salad. A slice of lemon on the side brightens the flavor.
