Preparation
  1. In a crockpot, add the chicken thighs.
  2. Pour the diced tomatoes over the chicken.

Notes

Feel free to add vegetables such as bell peppers or zucchini for extra nutrition. If you want a thicker sauce, you can remove the lid for the last 30 minutes of cooking.
