Ingredients
  

Main Ingredients
  • 2 pieces Salmon fillets
  • 300 g Fresh spinach Use fresh for the best taste.
  • 150 g Shredded mozzarella Can be swapped for feta for a tangy taste.
  • 200 g Sour cream Use full-fat for creamier texture.
Aromatics
  • 2 cloves Garlic, minced
  • 1 one Onion, chopped
  • 1 piece Pepper, sliced
Seasonings and Oils
  • 1 tsp Salt Adjust to taste.
  • 1 tbsp Olive oil

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté garlic and onion until translucent.
  3. Add spinach and cook until wilted. Season with salt and add pepper.
Assembly
  1. Place the salmon fillets in a baking dish. Spread the spinach mixture over the fillets.
  2. Top with sour cream and sprinkle mozzarella on top.
Baking
  1. Bake in the preheated oven for 20-25 minutes or until the salmon is cooked through.

Notes

Cool the salmon to room temperature before storing. Store leftovers in an airtight container in the fridge for up to 2 days and reheat at 300°F (150°C) for 10 minutes.
