Preparation
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Sauté garlic and onion until translucent.
- Add spinach and cook until wilted. Season with salt and add pepper.
Assembly
- Place the salmon fillets in a baking dish. Spread the spinach mixture over the fillets.
- Top with sour cream and sprinkle mozzarella on top.
Baking
- Bake in the preheated oven for 20-25 minutes or until the salmon is cooked through.
Notes
Cool the salmon to room temperature before storing. Store leftovers in an airtight container in the fridge for up to 2 days and reheat at 300°F (150°C) for 10 minutes.
