Preparation
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine honey, olive oil, minced garlic, salt, and pepper.
- Add the carrot sticks to the bowl and toss until they are well coated.
Roasting
- Spread the carrots in a single layer on a baking sheet.
- Roast in the preheated oven for about 25-30 minutes, or until the carrots are tender and caramelized, stirring halfway through.
Serving
- Remove from the oven, garnish with fresh parsley, and serve warm.
Notes
Cool the carrots to room temperature before storing in an airtight container in the fridge for up to 4 days. Reheat in the oven at 350°F (175°C) for 8–10 minutes or warm in a microwave for 1–2 minutes. Try using maple syrup instead of honey for a different flavor profile. Add red pepper flakes for heat or balsamic vinegar for tang.
