Ingredients

  • 1 pound carrots, peeled and cut into sticks Cut evenly for uniform cooking.
  • 2 tablespoons honey Adjust for sweetness preference.
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced Fresh garlic recommended for best flavor.
  • to taste Salt and pepper
  • for garnish Fresh parsley, chopped Adds brightness when served.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine honey, olive oil, minced garlic, salt, and pepper.
  3. Add the carrot sticks to the bowl and toss until they are well coated.
Roasting
  1. Spread the carrots in a single layer on a baking sheet.
  2. Roast in the preheated oven for about 25-30 minutes, or until the carrots are tender and caramelized, stirring halfway through.
Serving
  1. Remove from the oven, garnish with fresh parsley, and serve warm.

Notes

Cool the carrots to room temperature before storing in an airtight container in the fridge for up to 4 days. Reheat in the oven at 350°F (175°C) for 8–10 minutes or warm in a microwave for 1–2 minutes. Try using maple syrup instead of honey for a different flavor profile. Add red pepper flakes for heat or balsamic vinegar for tang.
