Ingredients
  

Dough Ingredients
  • 2 cups warm water Ensure the water is warm but not hot for yeast activation.
  • 1 packet active dry yeast Make sure the yeast is fresh.
  • 1 tablespoon sugar
  • 4.5 cups all-purpose flour Substituting whole wheat flour is possible but may change texture.
  • 1 teaspoon salt
Boiling and Topping
  • 1/4 cup baking soda
  • 1 large egg, beaten For brushing on pretzel bites.
  • to taste Coarse sea salt For sprinkling on top.

Method
 

Preparation
  1. In a large bowl, combine warm water, yeast, and sugar. Let it sit for 5 minutes until it becomes foamy.
  2. Add the flour and salt, then mix until a dough forms. Knead the dough on a floured surface for about 5 minutes.
  3. Place the dough in a greased bowl, cover it, and let it rise for 1 hour.
Cooking
  1. Preheat your oven to 450°F (230°C).
  2. Bring a large pot of water to a boil and add the baking soda.
  3. Divide the dough into small pieces and shape them into bites.
  4. Boil the pretzel bites in the water for about 30 seconds, then remove and place them on a baking sheet.
  5. Brush the bites with the beaten egg and sprinkle with coarse salt.
  6. Bake for 12-15 minutes until they are golden brown.

Notes

Serve warm with mustard or cheese sauce for dipping. Store leftovers in an airtight container at room temperature for 2-3 days or in the refrigerator for up to a week. To freeze, wrap well and they will stay fresh for up to 3 months. For added flavor, consider sprinkling garlic powder or herbs before baking, or experiment with toppings like sesame seeds.
