- In a large pot, brown the ground beef with the chopped onion over medium heat.
- Drain the excess fat.
- Add the carrots, potatoes, green beans, corn, diced tomatoes, beef broth, garlic powder, salt, and pepper.
- Stir to combine and bring to a boil.
Cooking
- Reduce heat, cover, and simmer for about 30 minutes or until vegetables are tender.
- Serve hot in bowls. Add bread or crackers on the side. A simple green salad goes well.
Notes
Cool the stew to room temperature before storing. Store in an airtight container for 3 to 4 days in the fridge or freeze for up to 3 months. Thaw in the fridge before reheating.
