  • 1 cup cooked rice
  • 1 cup cooked lentils Rinse and drain well if using canned.
  • 1/2 cup chopped vegetables (carrots, bell peppers, etc.) Chop vegetables small for quicker cooking.
  • 1/4 cup diced onions
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil Use less for a lighter dish.
  • to taste salt
  • to taste pepper
  • chopped cilantro for garnish

Method
 

Cooking
  1. In a large pan, heat olive oil over medium heat.
  2. Add diced onions and minced garlic, sautéing until softened.
  3. Stir in the chopped vegetables and cook for 5-7 minutes.
  4. Add the cooked rice and lentils, mixing well.
  5. Season with salt and pepper to taste.
  6. Cook for another 2-3 minutes until everything is heated through.
  7. Serve warm, garnished with chopped cilantro.

Notes

Let it cool to room temperature before storing in an airtight container. Stores well in the fridge for 3-4 days or can be frozen for up to 2 months.
