Ingredients
  

Main ingredients
  • 4 large potatoes Regular potatoes work best
  • 4 cloves garlic Minced
  • 1/4 cup olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • to taste Salt
  • to taste Pepper
  • 1/4 cup grated Parmesan cheese (optional) Add during last 10 minutes of baking

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the potatoes. Carefully slice them thinly, making sure not to cut all the way through (stop about 1/4 inch from the bottom).
Seasoning
  1. In a small bowl, mix the olive oil, minced garlic, rosemary, thyme, salt, and pepper.
  2. Brush the mixture generously over the potatoes, making sure it gets into the cuts.
Baking
  1. Place the potatoes on a baking sheet and bake for 45-60 minutes, or until crispy and golden.
  2. If using, sprinkle Parmesan cheese over the potatoes in the last 10 minutes of baking.

Notes

Let the potatoes cool to room temperature. Store in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F (175°C) for 10-15 minutes to keep them crisp. Avoid microwaving if you want to keep the texture.
