  • 1 lb ground beef Use lean ground beef to reduce fat content.
  • 2 medium zucchinis, sliced You can use frozen zucchini; just thaw and drain before use.
  • 1 cup shredded cheese (cheddar or mozzarella) Feel free to experiment with different cheese types.
  • 1 can (15 ounces) diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, cooking until softened.
  3. Add ground beef to the skillet, cooking until browned. Drain excess fat.
  4. Stir in sliced zucchini, diced tomatoes, Italian seasoning, salt, and pepper. Cook for a few minutes until zucchini is slightly tender.
  5. Transfer the mixture to a baking dish and top with shredded cheese.
  6. Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
  7. Let cool slightly before serving. Enjoy!

Notes

Serve with a side salad, warm bread, or rice for a more filling meal. To store leftovers, let the casserole cool completely, then place in an airtight container and keep in the refrigerator for about 3-4 days. Reheat in the oven or microwave.
