Ingredients
  

Pasta and Vegetables
  • 8 ounces pasta Use any small shape of pasta, such as rotini or penne
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell pepper, diced
  • 1/2 cup red onion, diced
  • 1/2 cup olives, sliced
  • 1 cup mozzarella cheese, cubed
  • 1/4 cup parsley, chopped
Dressing
  • 1/2 cup Italian dressing Feel free to use homemade dressing or a different type if desired
  • to taste Salt and pepper Add more to your liking

Method
 

Preparation
  1. Cook the pasta according to package directions, drain, and cool.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, olives, mozzarella cheese, and parsley.
  3. Drizzle with Italian dressing and season with salt and pepper.
  4. Toss everything together until well combined.
  5. Serve immediately or refrigerate for later use.

Notes

For best flavor, chill for a few hours before serving. If the pasta absorbs too much dressing, add a little extra dressing before serving.
