Main Ingredients
  • 1 lb Ground beef, lean Use lean ground beef to reduce splatter and excess fat.
  • 1/2 tsp Garlic powder Or use 1 clove minced garlic for fresh garlic flavor.
  • 1 cup Green chile, mild or spicy canned or roasted Choose according to your heat preference.
  • 3 cups Beef broth Add more if the mixture gets too thick.
  • 2 heaping tbsp Tomato paste
  • 1 cup Pasta Use any pasta shape you like.
  • Salt & pepper to taste Taste and add near the end.
  • 2 cups Cheddar cheese Grate your own for smoother texture.

Method
 

Cooking
  1. In a large skillet over medium heat, brown the ground beef until fully cooked.
  2. Add the chopped onion and garlic powder, cooking until the onion is soft.
  3. Stir in the green chiles, beef broth, tomato paste, and pasta.
  4. Bring to a boil, then reduce heat and simmer until the pasta is tender, about 10-12 minutes.
  5. Stir in the cheddar cheese until melted and creamy.
  6. Season with salt and pepper to taste. Serve hot.

Notes

Serve hot from the skillet topped with extra cheese, cilantro, or sour cream and with lime wedges on the side. Pair with a simple salad or warm tortillas. Store leftovers in an airtight container.
