Ingredients
  

Pasta Ingredients
  • 8 oz pasta (fusilli or penne)
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/2 medium red onion, finely chopped
  • 1/4 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled
Dressing Ingredients
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • to taste Salt
  • to taste Pepper

Method
 

Cooking Pasta
  1. Cook the pasta according to package instructions until al dente. Drain and let cool.
Mixing Ingredients
  1. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, black olives, and feta cheese.
Prepare Dressing
  1. In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper.
Combine Salad
  1. Pour the dressing over the pasta salad and toss to combine.
  2. Serve immediately or refrigerate for a few hours to let the flavors meld.

Notes

Serve this salad cold or at room temperature. It pairs well with grilled chicken or bread. To store, keep in an airtight container for 3 to 4 days. Stir before serving as pasta may soak up dressing.
