- Heat olive oil and butter in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes on each side until browned and cooked through. Remove the chicken and set aside.
- In the same skillet, add mushrooms and garlic. Sauté until mushrooms are soft and golden, about 5 minutes.
- Pour in chicken broth and add thyme, stirring to combine.
- Return the chicken to the skillet and simmer for 2-3 minutes until heated through.
- Garnish with fresh parsley and serve.
Notes
Cool the chicken to room temperature before storing. Store in the fridge for up to 3 days or freeze for up to 2 months. For creamier sauce, add a splash of cream. For deeper flavor, consider using white wine instead of broth.
