  • 8 oz mushrooms, sliced any variety you prefer
  • 4 cloves garlic, minced fresh for best flavor
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1/2 cup chicken broth ensure gluten-free if needed
  • 1 teaspoon thyme fresh for best flavor
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Method
 

Cooking Instructions
  1. Heat olive oil and butter in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes on each side until browned and cooked through. Remove the chicken and set aside.
  3. In the same skillet, add mushrooms and garlic. Sauté until mushrooms are soft and golden, about 5 minutes.
  4. Pour in chicken broth and add thyme, stirring to combine.
  5. Return the chicken to the skillet and simmer for 2-3 minutes until heated through.
  6. Garnish with fresh parsley and serve.

Notes

Cool the chicken to room temperature before storing. Store in the fridge for up to 3 days or freeze for up to 2 months. For creamier sauce, add a splash of cream. For deeper flavor, consider using white wine instead of broth.
