  • 1 pound chicken breast, diced Cut chicken into similar-size pieces for even cooking.
  • 4 cloves garlic, minced Sauté until fragrant.
  • 1 cup chicken broth Add more if using dry brown rice.
  • 1 cup broccoli florets Can substitute with peas or spinach.
  • 1 cup shredded cheese (cheddar or mozzarella) Feel free to mix cheeses.
  • 1 teaspoon olive oil Used for sautéing the garlic.
  • Salt and pepper to taste Adjust seasoning before baking.

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add diced chicken breast to the skillet, season with salt and pepper, and cook until golden brown.
  4. In a baking dish, combine the cooked rice, chicken mixture, chicken broth, and broccoli florets. Stir everything together.
  5. Top with shredded cheese.
  6. Cover with foil and bake for 20 minutes.
  7. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
  8. Serve warm.

Let the dish rest for 5 minutes before serving for better structure. Store cool leftovers in the fridge for up to 3 days, or freeze for up to 2 months.
