  • 500 g cod fillets, cut into strips
  • 3 tbsp butter
  • 3 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 Juice of 1/2 lime lime juice
  • 1 tbsp olive oil
Sweet chili lime sauce
  • 4 tbsp sweet chili sauce
  • 1 Juice of 1 lime lime juice
  • 1 tsp honey (optional)
  • 1 tsp soy sauce or fish sauce (optional)
  • 1 tsp finely grated garlic or ginger (optional)

Method
 

Preparation
  1. Pat cod dry and season with salt, pepper, paprika, and lime juice.
  2. Heat olive oil and butter in a large pan over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
Cooking
  1. Add cod strips and cook for 2–3 minutes per side until golden and flaky. Remove from heat.
  2. In a small bowl, mix sweet chili sauce, lime juice, honey, soy/fish sauce, and garlic or ginger.
  3. Drizzle sauce over the cod or serve on the side. Spoon extra garlic butter from the pan on top.

Notes

Serve the cod warm over rice, noodles, or a simple salad. Add lime wedges for extra tang and garnish with chopped parsley or green onion if you like. Store cooked cod in the fridge for up to 2 days and reheat gently.
