Main Ingredients
  • 4 pieces croissants, cubed Use day-old or fresh croissants.
  • 4 large eggs
  • 1 cup milk
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp salt
Streusel Topping
  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 1/4 cup butter, melted Use unsalted butter if desired.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, whisk together the eggs, milk, sugar, vanilla, cinnamon, and salt.
  3. Add the cubed croissants to the egg mixture and let sit for about 10 minutes to soak.
Making Streusel
  1. In another bowl, mix flour, brown sugar, and melted butter until crumbly to make the streusel topping.
Baking
  1. Divide the croissant mixture among the muffin cups and sprinkle with the streusel topping.
  2. Bake for 20-25 minutes or until golden brown.
  3. Allow to cool slightly before serving.

Notes

Serve warm or at room temperature. Add a drizzle of maple syrup, a dusting of powdered sugar, or a spoonful of jam. They pair well with coffee or milk.
