  • 1 cup long-grain rice
  • 2 cups vegetable broth Can be substituted with beef broth for a richer taste.
  • 1 large onion, thinly sliced Cook slowly for best caramel flavor.
  • 2 tablespoons olive oil For sautéing the onions.
  • 1 teaspoon garlic powder
  • to taste Salt and pepper Adjust according to preference.
  • 1 cup shredded cheese (Swiss or Gruyère) For classic onion-cheese flavor.
  • 1/2 cup sour cream Can replace with cream cheese for extra creaminess.
  • Fresh parsley for garnish Add for color and presentation.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the onions until caramelized, about 15-20 minutes.
  3. In a large bowl, combine cooked rice, caramelized onions, vegetable broth, garlic powder, salt, and pepper.
  4. Stir in the sour cream and half of the shredded cheese.
  5. Pour the mixture into a greased baking dish and top with the remaining cheese.
  6. Bake for 25-30 minutes until heated through and cheese is bubbly.
  7. Garnish with fresh parsley before serving.

Notes

Serve hot as a side dish or a main dish with a green salad. Cool and store leftovers in the fridge for up to 3 days. Reheat in the oven or microwave.
