- Heat sesame oil in a pan over medium heat.
- Add mixed vegetables and sauté until tender.
- Push the vegetables to one side of the pan, crack the eggs into the other side, and scramble them until cooked.
- Add the cooked rice to the pan and mix with the vegetables and eggs.
- Pour in the soy sauce, and season with salt and pepper.
- Stir well and cook for another 2-3 minutes until heated through.
- Garnish with chopped green onions before serving.
Notes
Allow rice to cool before storing in an airtight container. Store in the fridge for up to 3 days. Reheat before serving.
