Ingredients
  

Main Ingredients
  • 200 g chowmein noodles
  • 2 eggs
  • 1 cup mixed vegetables (carrots, bell peppers, peas) You can use different vegetables as desired.
  • 2 tablespoons soy sauce For seasoning.
  • 1 tablespoon oil For sautéing.
  • 1 teaspoon garlic (minced)
  • Salt and pepper to taste
  • Spring onions for garnish

Method
 

Cooking
  1. Boil the chowmein noodles according to package instructions. Drain and set aside.
  2. In a pan, heat oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add mixed vegetables and stir-fry for 2–3 minutes.
  4. Push the vegetables to one side of the pan and crack the eggs into the other side. Scramble the eggs until fully cooked.
  5. Combine the vegetables and eggs, then add the cooked noodles.
  6. Pour soy sauce over the mixture, season with salt and pepper, and stir everything together for another 2–3 minutes.
  7. Serve hot, garnished with chopped spring onions.

Notes

For added flavor, you can use sesame oil or chili sauce. To store, let cool and keep in an airtight container in the fridge for up to 2 days. Reheat in a pan, adding a splash of water or oil.
