Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large baking dish, arrange the tilapia fillets.
  3. Add the mixed vegetables around the fish.
  4. Drizzle olive oil over the tilapia and vegetables.
  5. Sprinkle minced garlic, salt, pepper, and Italian herbs if using.
  6. Place lemon slices on top of the fish.
  7. Cover with aluminum foil and bake for 20-25 minutes, until the fish is cooked through and the vegetables are tender.
  8. Serve warm.

Notes

Use fresh ingredients for best flavor. Experiment with different vegetables based on availability. Add red pepper flakes for a little heat. Leftovers keep well in the fridge for up to 3 days.
