Preparation
- Preheat the oven to 400°F (200°C).
- In a large baking dish, arrange the tilapia fillets.
- Add the mixed vegetables around the fish.
- Drizzle olive oil over the tilapia and vegetables.
- Sprinkle minced garlic, salt, pepper, and Italian herbs if using.
- Place lemon slices on top of the fish.
- Cover with aluminum foil and bake for 20-25 minutes, until the fish is cooked through and the vegetables are tender.
- Serve warm.
Notes
Use fresh ingredients for best flavor. Experiment with different vegetables based on availability. Add red pepper flakes for a little heat. Leftovers keep well in the fridge for up to 3 days.
