  • 3 cups hash browns Use thawed shredded hash browns for even cooking.
  • 1 cup cooked sausage Cooked and crumbled.
  • 1 cup cooked bacon Cooked and crumbled.
  • 8 large eggs Beaten well with other ingredients.
  • 1 cup cheese Shredded (cheddar or pepper jack for a spicy kick).
  • 1/2 cup milk Use extra if using fewer eggs.
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the sausage and bacon until browned.
  3. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  4. In a greased baking dish, layer the hash browns, cooked sausage, bacon, and cheese.
  5. Pour the egg mixture over the top.
Cooking
  1. Bake for 30-35 minutes or until the eggs are set and the top is golden.
  2. Let cool for a few minutes before serving.

Notes

Let the casserole rest for 5 minutes before cutting to keep pieces neat. For a handheld option, place a piece into a tortilla and eat like a wrap.
