  • 3 pieces very ripe bananas, mashed Approximately 1 1/2 cups mashed
  • 1/3 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Optional Add-Ins
  • 1/2 cup chopped walnuts or pecans Optional for added crunch
  • 1/2 cup chocolate chips Optional for a sweeter treat
  • 1 teaspoon cinnamon Optional for extra warmth and flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the melted butter, sugar, egg, and vanilla extract to the mashed bananas and mix well.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix gently until just combined.
  6. If desired, fold in the optional ingredients like walnuts or chocolate chips.
Baking
  1. Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a skewer inserted comes out clean.
  2. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Use very ripe bananas for best flavor. Don’t overmix the batter to keep the bread tender. Allow the bread to cool completely before slicing.
