  • 8 ounces spaghetti Cooked according to package directions
  • 1 can cream of chicken soup
  • 1 cup chicken broth Use low-sodium if desired
  • 2 cups shredded mozzarella cheese Additional cheese can be added for a richer flavor
  • 1 cup diced tomatoes
  • 1 teaspoon Italian seasoning

Preparation
  1. Place the chicken breasts in the crockpot.
  2. In a bowl, mix together cream of chicken soup, chicken broth, diced tomatoes, Italian seasoning, salt, and pepper. Pour the mixture over the chicken.
Cooking
  1. Cook on low for 6-7 hours or high for 3-4 hours.
  2. Once the chicken is cooked, shred it in the crockpot.
  3. Cook spaghetti according to package directions and drain.
  4. Mix the spaghetti into the crockpot with the chicken and sauce.
  5. Stir in the mozzarella cheese until melted.
Serving
  1. Serve hot in deep plates, garnished with fresh parsley.

Notes

Use low-sodium broth if you watch salt. Shred the chicken well for better mixing. Cook the pasta just until al dente to avoid mushy texture. For variations, you can add red pepper flakes for spice or use different types of pasta.
