Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the sliced squash with olive oil, salt, and black pepper until well coated.
  3. Spread the squash in a single layer on a baking sheet.
Cooking
  1. Roast in the preheated oven for about 20 minutes, turning halfway through, until the squash is golden and tender.
  2. Remove from oven and sprinkle grated Parmesan cheese on top.
  3. Return to the oven for an additional 5 minutes or until the cheese is melted and crispy.
Serving
  1. Serve warm as a side dish, pairing well with roasted meats, fish, or grains.

Notes

Let squash cool to room temperature before storing. Store in an airtight container for up to 3 days. Reheat in the oven to maintain crispiness. For extra flavor, consider adding garlic powder or paprika before roasting.
