Method
Cooking the Pasta
- Cook the pasta in a large pot of salted boiling water until al dente.
Searing the Shrimp and Cooking the Sauce
- In a skillet, heat olive oil and 1 tbsp butter. Add shrimp, season with salt and pepper, and sear for 1-2 minutes per side.
- Remove the shrimp. Add remaining butter and garlic to the skillet, and sauté until fragrant. Stir in sun-dried tomatoes.
- Pour in heavy cream and broth, add crushed red pepper flakes and Italian seasoning, and let simmer until thickened.
- Stir in parmesan until smooth.
Finishing Touches
- Toss the cooked pasta and shrimp in the sauce, garnish with parsley and additional cheese, and serve.
Notes
Serve hot right after tossing with the sauce. Add extra parmesan and a sprinkle of parsley. A simple side salad and crusty bread work well. Serve with a lemon wedge for a bright touch.
