Creamy Shrimp Pasta Delight

Ingredients
  

Pasta and Shrimp
  • 1/2 lb large shrimp, peeled and deveined
  • 1/2 lb rigatoni pasta (or any mix of pasta shapes)
Sauce Ingredients
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup grated parmesan cheese
  • 1 tbsp olive oil
  • 2 tbsp butter Split into two portions for cooking
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken or seafood broth
  • 1/4 tsp crushed red pepper flakes
  • 1 tsp Italian seasoning
  • Salt & black pepper to taste
  • 1 tbsp chopped parsley (for garnish)

Method
 

Cooking the Pasta
  1. Cook the pasta in a large pot of salted boiling water until al dente.
Searing the Shrimp and Cooking the Sauce
  1. In a skillet, heat olive oil and 1 tbsp butter. Add shrimp, season with salt and pepper, and sear for 1-2 minutes per side.
  2. Remove the shrimp. Add remaining butter and garlic to the skillet, and sauté until fragrant. Stir in sun-dried tomatoes.
  3. Pour in heavy cream and broth, add crushed red pepper flakes and Italian seasoning, and let simmer until thickened.
  4. Stir in parmesan until smooth.
Finishing Touches
  1. Toss the cooked pasta and shrimp in the sauce, garnish with parsley and additional cheese, and serve.

Notes

Serve hot right after tossing with the sauce. Add extra parmesan and a sprinkle of parsley. A simple side salad and crusty bread work well. Serve with a lemon wedge for a bright touch.
