Preparation
- Pat the chicken dry and season both sides with Italian seasoning, salt, and pepper.
- Heat the olive oil and butter in a large skillet over medium heat.
Cooking Chicken
- Add the chicken to the hot skillet. Cook until golden and cooked through, about 6–7 minutes per side.
- Remove the chicken and set it aside.
Making Sauce
- In the same skillet, add the minced garlic and cook until fragrant, about 30 seconds to 1 minute.
- Pour in the heavy cream and bring it to a low simmer. Stir in the grated Parmesan until the sauce is smooth.
Finishing
- Return the chicken to the skillet and spoon the sauce over the chicken. Let it warm for a minute.
- Garnish with fresh parsley and serve.
Notes
Cool the dish to room temperature before storing in an airtight container in the fridge for up to 3 days. Reheat gently. Simmer the sauce gently to avoid splitting.
