Method
Preparation
- Bring salted water to a boil. Cook spaghetti until al dente. Reserve 1/2 cup pasta water, drain, and set aside.
- In a large skillet over medium-high heat, brown ground beef. Season with Cajun seasoning, salt, and pepper. Drain excess fat if needed.
Sauce Making
- In the same skillet, melt butter and sauté garlic until fragrant (30 seconds).
- Pour in heavy cream and chicken broth, stirring to combine.
- Whisk in cream cheese until smooth. Add cheddar, mozzarella, and Parmesan, stirring until velvety and creamy.
- Add red pepper flakes if you like extra heat.
Combining
- Add cooked spaghetti to the skillet, tossing to coat.
- Fold in the Cajun beef.
- Adjust consistency with reserved pasta water if necessary.
Serving
- Plate creamy spaghetti with Cajun beef.
- Garnish with parsley, extra Parmesan, and a sprinkle of Cajun seasoning.
Notes
For best texture, do not overcook pasta. Use full-fat cream and cheese for the creamiest results. Cool leftovers and store in an airtight container for up to 3 days.
