Ingredients
  

For the Pasta
  • 12 oz spaghetti Cook until al dente
  • 1/2 cup reserved pasta water To adjust sauce consistency
For the Cajun Beef
  • 1 1/2 lbs ground beef
  • 1–1 1/2 tsp Cajun seasoning Adjust to taste
For the Sauce
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 oz cream cheese, softened Whisk until smooth
  • 3/4 cup shredded cheddar Use freshly grated for best flavor
  • 1/2 cup grated Parmesan Use freshly grated for best melt
  • 1/2 cup shredded mozzarella
  • 1/2 tsp red pepper flakes Optional for added spice
For Garnish
  • Fresh parsley For garnish
  • Extra Parmesan For garnish
  • A light sprinkle of Cajun seasoning For garnish

Method
 

Preparation
  1. Bring salted water to a boil. Cook spaghetti until al dente. Reserve 1/2 cup pasta water, drain, and set aside.
  2. In a large skillet over medium-high heat, brown ground beef. Season with Cajun seasoning, salt, and pepper. Drain excess fat if needed.
Sauce Making
  1. In the same skillet, melt butter and sauté garlic until fragrant (30 seconds).
  2. Pour in heavy cream and chicken broth, stirring to combine.
  3. Whisk in cream cheese until smooth. Add cheddar, mozzarella, and Parmesan, stirring until velvety and creamy.
  4. Add red pepper flakes if you like extra heat.
Combining
  1. Add cooked spaghetti to the skillet, tossing to coat.
  2. Fold in the Cajun beef.
  3. Adjust consistency with reserved pasta water if necessary.
Serving
  1. Plate creamy spaghetti with Cajun beef.
  2. Garnish with parsley, extra Parmesan, and a sprinkle of Cajun seasoning.

Notes

For best texture, do not overcook pasta. Use full-fat cream and cheese for the creamiest results. Cool leftovers and store in an airtight container for up to 3 days.
