Preparation
- Preheat the oven to 350°F (175°C).
- Line a baking sheet with parchment paper and arrange the saltine crackers in a single layer.
Making the Toffee
- In a saucepan, melt the butter and brown sugar over medium heat, stirring until combined.
- Bring to a boil and cook for 3 minutes without stirring.
- Remove from heat and stir in the vanilla extract.
- Pour the toffee mixture over the crackers, spreading it evenly.
- Bake in the preheated oven for 5-7 minutes, or until bubbly.
Topping
- Remove from the oven and sprinkle chocolate chips on top.
- Let sit for a few minutes until the chocolate is melted, then spread it over the toffee layer.
- If desired, sprinkle chopped nuts on top.
Cooling and Serving
- Allow to cool, then break into pieces and serve.
Notes
Store in an airtight container at room temperature for up to 3 days. For longer storage, keep in the fridge for up to 2 weeks with parchment layers to prevent sticking. Use even rows of crackers for even spreading of toffee.
