  • 1 cup unsalted butter Melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder Quality cocoa recommended for better flavor
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon instant espresso powder More can be added for a stronger coffee flavor
  • 1 cup chocolate chips Quality recommended

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a bowl, melt the butter and mix in the sugar until well combined.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
  4. In another bowl, combine the flour, cocoa powder, baking powder, salt, and espresso powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
Baking
  1. Pour the batter into the prepared baking pan and spread evenly.
  2. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
  3. Allow to cool before cutting into squares and serving.

Notes

For a warm-and-cold treat, serve with a scoop of vanilla ice cream. Optional toppings include powdered sugar or melted chocolate.
