Preparation
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir the melted butter into the mashed bananas.
- Mix in the baking soda and salt.
- Stir in the sugar, beaten egg, and vanilla extract.
- Mix in the flour until just incorporated.
- Pour the batter into a greased loaf pan.
Baking
- Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
Cooling
- Let it cool in the pan for a few minutes, then transfer to a wire rack.
Notes
Serve sliced, warm or at room temperature, and spread with butter, cream cheese, or nut butter. Pairs well with coffee or tea. To store, wrap cooled loaf in plastic wrap; keep at room temperature for 2–3 days or freeze actual slices for up to 3 months.
