  • 3 pieces ripe bananas, mashed Use very ripe bananas for optimal flavor.
  • 1/3 cup melted butter Make sure it's melted before mixing.
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar Can substitute with brown sugar for deeper flavor.
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon cinnamon Adjust to taste; mix with sugar for a stronger swirl.
  • 1/2 cup chopped walnuts or pecans (optional) Toast for more flavor if desired.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the baking soda and salt.
  5. Stir in the sugar, beaten egg, and vanilla extract.
  6. Mix in the flour until just incorporated.
Assembly and Baking
  1. Pour half of the batter into the prepared loaf pan.
  2. Sprinkle half of the cinnamon over the batter.
  3. Pour the remaining batter on top and spread it evenly.
  4. Sprinkle the rest of the cinnamon on top.
  5. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let it cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Slice the bread after it cools a little. Serve warm or at room temperature with butter, cream cheese, or honey. Store wrapped in plastic or an airtight container for up to 3 days, or freeze slices for up to 3 months.
