Preparation
- Melt the semi-sweet chocolate chips in a microwave-safe bowl and let cool slightly.
- In a mixing bowl, stir together cocoa powder, granulated sugar, and vegetable oil until mixed.
- Add the melted chocolate, eggs, and vanilla extract, stirring until smooth.
- In another bowl, mix baking powder, salt, and flour. Gradually add this mixture to the chocolate mixture until a dough forms.
- Cover and chill the dough for at least 2 hours or overnight.
Baking
- Preheat the oven to 350°F (175°C).
- Roll the chilled dough into balls and then roll each ball in powdered sugar.
- Place the sugared balls on a baking sheet and bake for 10-12 minutes until the edges are set but the center remains soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.
Notes
These cookies can be paired with milk, coffee, or ice cream. Store in an airtight container with a slice of bread to keep them soft.
