  • 1 pound ground chicken
  • 2 medium zucchinis, grated Make sure to squeeze out excess moisture.
  • 1/2 cup breadcrumbs Can use gluten-free breadcrumbs for a gluten-free option.
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste Adjust according to preference.
  • Olive oil spray For crispiness.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together ground chicken, grated zucchini, breadcrumbs, Parmesan cheese, garlic, onion powder, Italian seasoning, salt, and pepper until well combined.
  3. Scoop a tablespoon of the mixture and shape it into bite-sized balls or patties.
  4. Place the poppers on a baking sheet lined with parchment paper.
  5. Lightly spray the poppers with olive oil spray to help them crisp up.
Cooking
  1. Bake in the preheated oven for 20-25 minutes or until golden brown and cooked through.

  1. Serve warm as a snack or appetizer, optionally with marinara or ranch sauce.

Notes

Store in airtight container in the refrigerator for up to 3 days or freeze for later use. For a crispier texture, consider broiling for the last few minutes of baking.
