Main Ingredients
  • 1 kg chicken, cut into pieces Bone-in chicken can be used for more flavor, increase cooking time by 5-10 minutes.
  • 2 large onions, finely chopped Brown them well for deeper flavor.
  • 2 tomatoes, chopped For a tomato-free version, use roasted bell pepper puree.
  • 1 cup plain yogurt Use full-fat yogurt to prevent curdling; stir before adding.
  • 2 tablespoons ginger-garlic paste
  • 2-3 green chilies, slit Adjust for desired heat.
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 tablespoon coriander powder
  • 1 tablespoon garam masala Add at the end for flavor.
  • 2-3 tablespoons oil For sautéing.

Method
 

Cooking
  1. Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in ginger-garlic paste and green chilies; cook for 1-2 minutes.
  4. Add chopped tomatoes and cook until soft.
  5. Mix in turmeric powder, coriander powder, and salt; cook for a few minutes.
  6. Add chicken pieces and sauté until they are browned.
  7. Stir in yogurt and mix well. Cover and cook for about 20-25 minutes, until the chicken is cooked through.
  8. Sprinkle garam masala and mix.
  9. Garnish with fresh cilantro before serving.

Notes

Serve hot with plain rice, jeera rice, or naan. Pair with cucumber raita or salad. For a creamier version, add 2 tablespoons of cream at the end.
