  • 1 lb chicken breast, sliced
  • 1 bell pepper (red, green, or yellow), sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 cup rice Rinse if you want less starch
  • 2 cups chicken broth Use low-sodium broth to control salt
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • 2 tablespoons Olive oil For cooking
  • to taste Fresh cilantro (for garnish)

Method
 

Cooking
  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced chicken and cook until browned.
  3. Stir in onion, bell pepper, and garlic; cook until vegetables are soft.
  4. Add rice, chicken broth, chili powder, cumin, salt, and pepper.
  5. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes, or until rice is cooked.
  6. Fluff rice with a fork and garnish with fresh cilantro before serving.

Notes

Serve hot from the pan. Add a squeeze of lime or extra cilantro if you like. It goes well with sour cream, salsa, or shredded cheese on the side. Cool rice to room temp before storing.
