  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese Feel free to mix with other cheese varieties.
  • 1 cup shredded mozzarella cheese
  • 1 cup ranch dressing Consider a light or spicy version for a twist.
  • Salt and pepper to taste Ranch dressing is already flavored; adjust accordingly.
  • Green onions for garnish (optional) Can be added just before serving.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the diced potatoes, shredded chicken, crumbled bacon, cheddar cheese, mozzarella cheese, and ranch dressing.
  3. Mix until well combined and season with salt and pepper to taste.
  4. Pour the mixture into a greased baking dish and spread evenly.
Baking
  1. Bake for 30-35 minutes or until the potatoes are tender and the top is golden brown.
  2. Garnish with green onions if desired and serve warm.

Notes

Let the casserole cool for a few minutes before serving. This dish makes great leftovers and can be stored in the refrigerator for up to 3 days.
