Preparation
  1. Boil the baby potatoes in salted water until tender. Drain and let cool slightly.
  2. Preheat your oven to 400°F (200°C).
  3. Smash the potatoes gently with a fork or potato masher.
Mixing
  1. In a bowl, mix the smashed potatoes with cheddar cheese, sour cream, butter, garlic powder, salt, and pepper.
Baking
  1. Place the smashed potatoes on a baking sheet and bake for 15-20 minutes until golden and crispy.
  2. Garnish with chives before serving.

Notes

For variations, consider adding crumbled cooked bacon, salsa, curry powder, or fresh herbs. Keep some texture when smashing for crisp edges.
