Ingredients
  

Main Ingredients
  • 1 lb Chicken breasts, boneless skinless
  • 2 cups Broccoli florets Use fresh or quick-steam frozen florets.
  • 1 cup Chicken broth
  • 8 oz Rotini pasta You can swap with penne, shells, or macaroni.
  • 1 packet Ranch seasoning mix Check for gluten-free options if needed.
  • to taste Salt and pepper
  • 2 tbsp Olive oil For cooking the chicken.
  • 2 cups Cheddar cheese Use sharp cheddar for stronger flavor.
  • 1 cup Heavy cream Can replace part with chicken broth for less creaminess.

Method
 

Cooking the Chicken and Vegetables
  1. In a skillet, heat olive oil over medium heat.
  2. Add chicken breasts, season with salt and pepper, and cook until no longer pink. Remove and set aside.
  3. In the same skillet, add broccoli and chicken broth; bring to a simmer.
  4. Add rotini pasta and cook according to package directions until al dente.
Combining Ingredients
  1. Return the chicken to the skillet, add ranch seasoning mix, heavy cream, and cheddar cheese.
  2. Stir until cheese is melted and everything is well combined.
Serving
  1. Serve warm and enjoy! Add extra cheese on top if desired.

Notes

Let the dish cool to room temperature. Store in an airtight container in the fridge for up to 3 days. Reheat in a pan or microwave, adding a splash of milk or cream to keep it creamy.
