Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the melted butter, brown sugar, and granulated sugar until smooth.
- Beat in the egg and egg yolk, then stir in the vanilla extract.
- In another bowl, mix the flour, baking soda, and salt together. Gradually blend this mixture into the wet mixture.
- Stir in the chocolate chips.
- In a separate bowl, beat the cream cheese until smooth.
Assembly
- Take a small amount of cookie dough, flatten it in your palm, add a teaspoon of cream cheese filling, and wrap the dough around it to form a ball.
- Place the cookies on a baking sheet lined with parchment paper.
Baking
- Bake for 12-15 minutes or until lightly golden.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Serve cookies at room temperature so the cream cheese stays soft. Store in an airtight container in the fridge for up to 4 days, or freeze for up to 2 months. For a soft center, warm in the microwave for 5-8 seconds.
