Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla.
- Combine the oats, flour, baking soda, and salt; gradually add this to the butter mixture.
- Fold in the chopped pecans and caramel bits.
- Drop rounded spoonfuls of dough onto ungreased baking sheets.
- Bake for 10-12 minutes or until the edges are golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Serve warm or at room temperature. They pair well with milk, coffee, or tea. Store in an airtight container at room temperature for up to 5 days, or freeze in a sealed bag for up to 3 months. Thaw at room temperature before serving.
