Preparation
- Pat dry salmon and shrimp, then rub generously with Cajun seasoning.
Cooking
- In a skillet with olive oil, sear salmon skin-side down first for 4–5 minutes per side, then remove.
- Sear shrimp for 2–3 minutes until pink.
- In the same skillet, melt butter and sauté garlic for 1–2 minutes until fragrant.
- Pour in heavy cream and stir in Parmesan, letting it simmer for 3–4 minutes until thickened slightly.
- Add salt and pepper to taste.
- Return salmon and shrimp to the skillet, spooning sauce over the top, and simmer for 2–3 minutes to heat through.
Serving
- Serve over mashed potatoes with a side of green beans, garnishing with chopped parsley and extra sauce.
Notes
Pat seafood very dry for better searing. Avoid overcrowding the skillet. Adjust seasoning gradually as Parmesan is salty. If sauce thickens too much, thin with a splash of milk or water. For extra heat, add cayenne or more Cajun seasoning. For variations, use just shrimp or just salmon and adjust the cream content if desired.
