Ingredients
  

For the cookies
  • 1 cup unsalted butter, softened Use room temperature butter for easy mixing.
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt Reduce or skip if using salted butter.
For dipping (optional)
  • 1 cup dark chocolate, for dipping Melt before dipping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Stir in the vanilla extract.
  4. Gradually add the flour and salt, mixing until the dough comes together.
Baking
  1. Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
  2. Flatten each ball slightly with the bottom of a glass.
  3. Bake for 10-12 minutes or until the edges are lightly golden.
  4. Remove from the oven and let cool on wire racks.
Serving
  1. If desired, melt dark chocolate and dip the cooled cookies, then let set before serving.

Notes

Store cookies in an airtight container at room temperature for up to 5 days, or freeze for up to 2 months. Thaw at room temperature before serving.
