Ingredients
  

Bruschetta Mixture
  • 4 pieces Roma tomatoes, diced Use very ripe tomatoes for best flavor.
  • 2 cloves fresh garlic, minced Mince the garlic small so it mixes well.
  • 1/3 cup fresh basil leaves, torn Tear basil by hand to keep its aroma.
  • 1 tablespoon balsamic vinegar
  • to taste Salt and freshly ground black pepper
Pasta Ingredients
  • 8 ounces angel hair pasta Do not overcook; cook to al dente.
  • 1 tablespoon extra virgin olive oil

Method
 

Cooking Pasta
  1. Cook the angel hair pasta according to package instructions; drain and set aside.
Preparing Bruschetta Mixture
  1. In a bowl, combine the diced tomatoes, minced garlic, torn basil leaves, balsamic vinegar, salt, and pepper.
Combining Ingredients
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the bruschetta mixture and cook for 2-3 minutes to blend the flavors.
  3. Combine the cooked pasta with the bruschetta mixture in the skillet and toss to combine. Serve warm.

Notes

For a fuller meal, serve with a side salad or some crusty bread. You can also warm leftover cooked chicken and place it on top or mix it in. Store in an airtight container in the fridge for up to 3 days; reheat gently.
