Preparation
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the chopped broccoli, shredded cheddar cheese, smoked paprika, garlic powder, onion powder, black pepper, and salt.
- Cut a pocket into each chicken breast and stuff with the broccoli cheese mixture.
Cooking
- Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts on both sides until golden brown.
- Transfer the chicken to a baking dish and bake for 20-25 minutes, or until the chicken is cooked through.
- Let it rest for a few minutes before slicing and serving.
Notes
Pound the chicken thin for an easier pocket and even cooking. Chop the broccoli small so it fits well inside the pocket. Use a mix of cheeses for more flavor. Do not overfill the pockets or they may burst while cooking. Use a meat thermometer to check for 165°F (74°C) internal temperature.
