  • 1 cup broccoli, chopped
  • 1 cup cheddar cheese, shredded
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the chopped broccoli, shredded cheddar cheese, smoked paprika, garlic powder, onion powder, black pepper, and salt.
  3. Cut a pocket into each chicken breast and stuff with the broccoli cheese mixture.
Cooking
  1. Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts on both sides until golden brown.
  2. Transfer the chicken to a baking dish and bake for 20-25 minutes, or until the chicken is cooked through.
  3. Let it rest for a few minutes before slicing and serving.

Notes

Pound the chicken thin for an easier pocket and even cooking. Chop the broccoli small so it fits well inside the pocket. Use a mix of cheeses for more flavor. Do not overfill the pockets or they may burst while cooking. Use a meat thermometer to check for 165°F (74°C) internal temperature.
